Quick Recipe for Busy Parents
Our wonderful doula shared this recipe with us, and it has now become a staple to have in the freezer. All too often I have days where I realize it is 2pm and I have nursed the baby and fed the toddler a million snacks, but all I have had is 3 cups of coffee. These are a fantastic thing to have on hand for when you go from “I will eat after I finish this one thing” to “Crap, I am STARVING.”

2 cup rolled oats
1 cup miniature semisweet chocolate chips
1 cup ground flax seed
1 cup crunchy peanut butter
2/3 cup honey
2 teaspoon vanilla extract
Optional Ingredients I have added:
1/2 cup chia seeds
1 cup coconut
1/2 cup protein powder
Mix everything together in a bowl and form into balls. Put them in the freezer and they are ready to eat! If you are like me, measuring ingredients is not something you do well so you can experiment with different quantities. Let me know if you try it with a different variation you love!
